Freezer Essentials

    Pesto

    OK my pesto is not strictly pesto as it doesn't have the pine nuts, but then the kids don't really like the texture with them, and it's the intense basil flavour they want.

    2 packets basil
    olive oil
    groundnut or grapeseed oil
    parmesan
    

    Blitz the basil paremsan and a mix of oils. I use both olive oil and the groundnut oil as the olive can be a little strong in flavour. It doesn't need that much parmesan, just enough to get a balance between the flavour and the texture right - the more parmesan, the more oil needed.

    What we've discovered is that the pesto freezes well and keeps it's vibrant green unlike those bottled pestos which look slightly brown.
