Celeriac

    Celeriac puree

    One of jane's favourites this. In theory simple, in practice, it's all about the texture

    So, chop the celeriac and steam until soft, but not soggy. We prefer to steam so that there not too much liquid. Season and add a good grating of nutmeg - I reckon we use a quarter nut. Add a slosh of milk and a good couple ounces of butter, then blitz with a blender. The secret to a good smooth puree is lots of butter, so if it's grainy add some more butter and keep blitzing until it's perfectly smooth.
