    French Onion Tart

    A light summer tart with crumbly pastry

    1 1/2 quantites of wholewheat pastry 
    1lb onions
    1 1/2oz butter
    1/2 tsp salt
    1/2 tsp brown sugar
    2 tsp fresh tarragon
    seasoning
    2 eggs
    2oz single cream
    3oz grated cheddar
    

    Preheat oven to 200deg. Roll out pastry into six 7cm tins, or one 11" tin and bake for 5 mins. Slowly fry the onions in the butter with the salt and sugar, so as not to colour them. Beat the eggs and cream. Add the onions and tarragon to the tart and pour over the cream mix, seasoning appropriately. Top with the grated cheese and bake for 30 to 35 minutes

    Wholewheat Shortcrust Pastry
    4oz Wholewheat flour and 1 tsp baking powder, or 4oz wholewheat self raising flour
    1oz butter
    1oz lard
    1 tsp brown sugar disolved in 1 1/2 tbsp cold water
    1 tbsp oil
    

    Preheat oven to 200deg. Rub the fat into the flour and mix the oil and sweet water, then sprinkle evenly over the dough. Form into a ball, adding more water if necessary. Knead for a few minutes and rest for 15 to 20 minutes.

    Roll out and press in firmly, prick with a fork. Bake for 5 to 7 minutes then fill as required.
