    Jamaica Crunch Pie

    
    170g Ginger nuts
    115g Butter, melted
    285ml Double cream
    397g Nestles condensed milk
    4 Lemons, juice and rind
    Plain chocolate to grate on top
    
    

    Crush the ginger nuts to a fine crumb, and stir with the melted butter until evenly coated. Press into a buttered dish and chill.

    Whisk together the cream, condensed milk, lemon juice and rind and add to the chilled base, then chill until firm. Sprinkle with grated chocolate to serve.
