Cabbage and Sprouts

    Coleslaw vinaigrette

    
    Half a small white cabbage
    1 bunch salad onions
    3 stalks celery
    50g ready to eat dried apricots
    1 medium carrot, peeled and coarsely grated
    
    For the vinaigrette
    2 level tbsp caster sugar
    2 tbsp white wine vinegar
    2 tablespoons olive oil
    salt and freshly
    ground black pepper
    
    

    Shred the cabbage very finely. Trim the salad onions, chop all the white and some of the green stems Trim the celery stalks, remove the strings then cut into fine dice. Snip the apricots into fine slivers.

    In a small bowl, stir the sugar with 2 tbsp of boiling water until the sugar has dissolved. Stir in the vinegar, season well with salt and pepper and add the olive oil. Pour this dressing over the salad and toss well.
