    Elderflower cordial

    This is a great use of free food around the village. The traditional recipies suggest about 20 heads of elderflower per gallon of liquid, but the issue is then that the cordial is too sweet in comparison to the flavour, so we tend to double up the quantity of elderflower. It's dead easy to make, the only issue is that it doesn't keep as long as the commercial ones because they have preservatives.

    So, the answer is to make a batch and freeze in plastic bottles.

    40 heads of elderflower
    5 oranges
    5 lemons
    2.5Kg sugar
    400g Citric Acid
    8 pints water
    

    Once the sugar has totally dissolved in the water, pour over the elderflower heads and the chopped oranges and lemon. Cover and leave to cool for 24 hours. Pass the liquid through a sieve, add the citric acid to taste and bottle.
