Mediterranean

    Chicken chorizo

    This is quite a staple for us as it's flexible as to what we've got in the fridge. It's also a one pan dish, meaning I can chuck it in the oven, sort the kids out and then it's ready.

    
    1 packet banana shallots, pealed with large ones cut in half
    1-2 bulbs of garlic broken up, majority of peel removed
    Couple handfuls of small spuds, chopped to bite size
    Couple Peppers, green, red or yellow chopped into chunks
    Rosemary
    Chorizo sliced or chopped smallish
    Packet chicken thighs 6-8, skins removed
    Sea salt and pepper
    Handful of cherry tomatoes
    
    

    Essentially throw the lot into a roasting pan, season well and cook at 200 deg for about an hour, turning occasionally if some of the ingredients are starting to char. Don't add too many tomatoes, otherwise there's too much liquid and things steam.
