Once a year

    Janes Xmas pie

    I asked jane what went into her xmas pie, and she simply said, what ever we have left over, so really helpful here...

    So what we tend to have left over is :

    
    Goose or turkey - lately we prefer goose
    Little sausages
    sausagemeat stuffing balls
    apricot and prune stuffing
    bits of bacon
    sprouts
    carrots
    Homemade cranberry sauce
    Homemade bread sauce
    
    

    The only items we tend to add extra, are a couple leeks sweated down in oil and butter and cream to provide a sauce.

    You really do need to ensure there's enough bread sauce left, both for flavour and to thicken up with the cream. All the ingredients are simply chopped small and bound together with the bread sauce and cream. It's difficult to provide quantities as these are leftovers, but we aim for a thickish overall consistency and a reasonable taste of cloves and nutmeg.

    And I'd like to say we make our own pastry, but it's xmas, so the shop bought shortcrust means these pies get made quickly with the minimum mess - that is of course until the kids notice and want to make jam tarts with the trimmings!
