    Janes 50th Birthday Cake

  4. Jane had seen this design in a magazine and always wanted this cake, so seemed appropriate for her 50th. The challenges here were with timing, as it's decorated with a lot of fresh fruit and flowers. It also didn't help that Janes birthday is soon after Roans, which somewhat restricted the time I had to plan and organise. I did however cheat slightly, in that the top two tiers are courtesy of sainsburys, who happen to sell a 4" and 7" chocolate pudding.

    I made the bottom layer which is our standard nutella cake, sandwiched together with 50:50 philidelphia and melted cadburys chocolate, with a layer of raspberry jam.

    I had to remove a bit of the sainsburys icing, then I covered the whole lot in a a mix of 2:1 - 70% dark chocolate to butter, icing. I think I used around 500g of chocolate and 250g of butter

    Once it was all set, and tiered, I put it aside to cool and set

    So, flowers don't keep out of water - I looked up on the internet that roses will survive about 6 hours - hey what fun - big party, lots of guests and last minute cake making !

    In the morning, I cut all the roses down, to about an inch of stalk, then tied them and some leaves to half a cocktail stick with fine garden wire - I did this so, I could keep them in water until later and stick them into the cake at last minute.

    I dressed the cake with fresias, roses, fresh raspberries, blackberries and redcurrants that I defrosted
