Asian beef salad
1. 

250g rice noodles
4 tbsp soy sauce
1 Lime, juiced
Ginger, grated 
2 tbsp oil
200g cooked beef
1 red pepper, sliced
Half a cucumber, sliced
Fresh coriander leaves

Soak the rice noodles according to pack instructions until tender.

Whisk together the soy sauce, lime juice, grated ginger and oil in a large serving bowl. Drain the noodles well, then tip into the bowl. Cut the beef into bite-size pieces, then add to the bowl along with the red pepper, cucumber and a handful of chopped coriander leaves. Toss everything together and serve.
