Spring onions
Fennel
Prawns

Dressing
125ml Lime juice
2 cloves garlic, grated
1 medium red chilli, finely chopped
2 tbsp muscovado sugar
2 tbsp fish sauce
2 tbsp fresh corriander, chopped
2 sticks lemongrass, soft inner bit, finely chopped
thumbnail piece fresh ginger, grated

Simply combine all the dressing ingredients and pour over the salad - mix well.
