    Cooked Ham

    I've read and tried lots of ham cooking recipes, such as cooking it in coke and black treacle, which were ok, but you can't use the stock and make pea and ham soup from it, so not very efficient. There's not much to this recipe, so it's more about tips and experiences. So...

    Soak the ham overnight before to remove as much salt as possible

    Simmer it for an hour or two in water, just covering it - but with carrots, onion, celery, pepper, herbs - especially bay. Then leave it to cool In the water so it doesn't dry out.

    Remove the skin, criss cross the fat and stud with clovers all over. Then smother with mustard and honey. Bake for 30mins or so at 200deg C - but keep basting it every 5 mins so it doesn't burn

    The stock should be perfect for pea and ham soup
