Once a year

    Marmalade

    This is once a year because Seville oranges are only available about Jan/Feb time.
    
    3Kg Seville Oranges
    5Kg Sugar
    4 Lemons
    4 Litres Water
    
    

    Put the oranges in the biggest pan with the water and lemon juice, bring to the boil then simmer with plate on top of the oranges to weigh them down, and lid on the pan to stop the water evaporating away. After a couple hours the oranges should be soft.

    Lift the oranges out with a slotted spoon and when cool enough to handle cut in half and scoop out the middle, adding the pips and pith back into the pan with the flavoured water. Boil the water with pan lid on for 6-8 minutes, then strain into a bowl extractng as much juice as possible.

    Warm the sugar in the oven while you chop the orange rind into little strips as this takes ages.

    Clean the pan, then add the sugar, the liquid and strips of orange rind into the pan. Warm until the sugar dissolves, then boil for 25-30 minutes until the marmalade is at the point of setting. I find I have to stir to stop it boiling over, and I test it on a plate from the freezer.

    Take off the heat and after a couple minutes scoop the scum off the top. Add a little knob of butter to dissolve any remaining scum.

    This makes around 20 jars.
