    Chinese style lamb steaks

    
    2 lamb chump steaks
    2 cloves garlic, peeled and crushed
    15g fresh root ginger, finely diced
    2 tbsp dry sherry
    1 tbsp soy sauce
    1 tbsp plum sauce
    2 layers of Chinese egg noodles, cooked and drained
    2 salad onion, finely sliced
    125g sugar snap peas
    115g baby corn
    fresh coriander, finely chopped
    2 tbsp soy sauce
    1 tsp sugar
    1 tbsp sesame oil
    
    

    Combine the garlic, ginger, sherry soy sauce and plum sauce. Stir well and pour over the lamb, coating both sides. Leave to stand for at least 5 mins.

    Shake the excess marinade off the lamb and cook the chops in a griddle pan or under a grill for 5-6 mins on each side. Put onto a heated serving dish and keep warm.

    Heat the sesame oil in a wok or large frying pan and add the salad onions, sugar snap peas and baby corn. Stir continuously and cook for 4-5 mins, then stir in the remaining marinade.

    Add the sugar to the soy sauce and stir into the vegetables. Add the noodles and when heated through transfer to a heated serving dish. Top with the lamb and serve imediately.
