General Baking

    Shortcrust pastry

The way to remember this is - half fat to flour....

    500g plain flour
    125g vegetable fat
    125g butter
100g icing sugar (for sweet shortcrust)

Chop the fat and butter into cubes and rub with finger tips to create a crumb. If making sweet shortcrust, stir throuh the icing sugar. Add cold water (up to 8 tbsp) until the pastry just comes together - don't over work it. Rest the pastry in a bag in the fridge for at least half an hour.
