    6 Conference pears
    1 vanilla pod
    1 Litre red wine
    150g soft brown sugar
    1 tsp black peppercorns
    4 star anise
    1 tsp quatre epices
    
    

    Peel the pears, keeping the stem attached. Split the vanilla pod lengthways, and scrape out the seeds then add them to the red wine with the pod.

    Put the pears in a saucepan, cover with the wine, then add the sugar, peppercorns, star anise and spices. Cook over a gentle heat for 45 minutes. Allow the pears to infuse for 24 hours in the fridge before serving.
