This is our simple website - running on a beaglebone black, it hosts our favourite recipes and cakes, and things that interest us. There's an area for the kids for when they start to learn computing at school, and a personal blog for us all

    Lemon Meringue Ice Cream

    
    Half pint double cream
    Finely grated rind & juice of 1 unwaxed lemon
    Half pint lemon curd
    Half packet of meringue nests (4)
    
    

    Whip the cream until thick but not solid.

    Mix in the lemon rind, juice and lemon curd - I use my electric hand mixer.

    Break the meringues into chunks and fold in gently with a spatula or large spoon.

    Line a pudding basin or loaf tin [2 lbs.] with cling-fiIm, allowing enough to fold over the top

    Pour in the lemon cream mixture, bring up the cling-film to cover and freeze until solid.

    Remove to fridge for 20 mins before serving.
