    Caramel fondant cakes

    150g sugar 
    100g lightly salted butter
    60ml water
    80ml whipping cream
    3 eggs, beaten
    140g plain flour
    custard or double cream to serve
    
    

    Heat the oven to l80 deg C

    Put the sugar in a saucepan with the water and dissolve over a low heat. Once dissolved, bring it up to a boil and simmer until it turns a dark gold colour. Add the butter and cream, then cook for 5 minutes. Cool to lukewarm, then add the eggs and the sifted flour:

    Butter and flour 6 small metal pudding moulds and fill them with the caramel

    mixture. Bake for 10 to 12 minutes until the top barely resists when touched, then unmould and serve immediately.
