Slimming World Meals

    Moroccan orange and cous-cous salad

    175g cous-cous
    1 bunch spring onions, trimmed and chopped finely
    1 small green pepper, deseeded and chopped
    10cm piece cucumber, chopped
    175g can chick peas, rinsed and drained
    2 oranges
    salt and pepper
    lettuce leaves to serve
    fresh mint sprigs to gamish
    
    Finely grated rind of an orange
    1 tbsp chopped fresh mint
    150ml low fat natual yogurt
    
    

    Put the cous-cous into a bowl and cover with boiling water. Leave it to soak for 15 mins to swell the grains, then stir with a fork to seperate them.

    Add the spring onion and green pepper and season well with salt and pepper.

    To make the dressing, mix together the orange rind, mint and low fat yogurt. Pour

    over the cous-cous mixture and stir well

    Remove the pith and peel from the oranges. Cut them into segments, removing all the membrane.

    Arrange the lettuce leaves on a serving plate. Pile on the cous-cous and arrange the orange segments on top. Garnish with sprigs of mint and serve.
