Steve's website

This is our simple website - running on a beaglebone black, it hosts our favourite recipes and cakes, and things that interest us. There's an area for the kids for when they start to learn computing at school, and a personal blog for us all

Breads

    Pikelets

These are nigh on identical to scottish pancakes - but they're supposed to be welsh

310g white or wholemeal self-raising flour
    85g caster sugar
    1 large egg
    340ml milk
    85g unsalted butter
    1 tsp white wine vinegar
    Half tsp bicarbonate of soda

Sift the flour and sugar into a bowl. Add the egg and milk to make a thick batter, whisking well to avoid lumps. Melt the butter, then add the vinegar and bicarbonate of soda and quickly mix the whole lot into the batter. Drop a few spoonfuls of batter on to a hot, lightly greased frying pan. Cook until bubbles appear on the surface and the bottoms are browned. Flip over and cook the other side.
