Dressings and Sauces

    Mediterrranean dressing

    This dressing is suitable for a hot goats cheese salad, or could be served with cold chicken.

    
    3 tbsp balsamic vinegar
    12 pitted olives
    6 large basil leaves
    1 shallot
    1 clove garlic
    Lemon juice
    Salt and pepper
    6 tbsp extra-virgin olive oil
    
    

    Place the balsamic vinegar in a saucepan and bring to the boil. Boil rapidly until the vinegar has reduced to about 2 tsp. Finely chop the olives, shred the basil, chop the shallot and crush the garlic. Mix all the ingredients into the pan with the balsamic vinegar, adding lemon juice and seasoning to taste. Warm the dressing until it is about 60 deg C, then pour into a bowl, cover with a plate and allow to infuse for one hour before use.
