This is our simple website - running on a beaglebone black, it hosts our favourite recipes and cakes, and things that interest us. There's an area for the kids for when they start to learn computing at school, and a personal blog for us all

General Baking

    Gingerbread biscuits

    This makes a couple dozen depending on size.

    
    l25g unsalted butter, softened, plus extra for greasing
    90g brown sugar
    3 tbsp molasses
    1 egg, beaten
    370g plain flour, sifted
    1 tsp bicarbonate of soda
    Half tsp salt
    1 tbsp ground ginger
    1 tsp ground cinnamon
    1 tsp ground mixed spice
    
    

    Beat the butter with the sugar and molasses until light and well mixed. Add the egg, then fold in the flour and other dry ingredients, sifted together.

    The mixture should come together easily. If it is too wet, add a little more flour; if it is too dry add more egg. Put the dough in the fridge for 30 minutes to chill.

    Preheat the oven to 180 deg C. Butter a baking tray and line it with parchment paper. Roll out the dough to about 5mm thick. Cut into your desired shapes and place on the prepared tray. Bake for l0- l5 mins, until slightly firm. Cool.
