Slimming World Meals

    Deep south rice and beans

    Green free

    
    175g long grain rice
    fry light
    1 small green pepper, cored deseeded and chopped
    1 small red pepper, cored deseeded and chopped
    1 onion chopped finely
    1 small red or green chilli, deseeded ard chopped finely
    2 tomatoes, chopped
    l25g canned, red kidney beans, rinsed and drained
    1 tbsp chopped fresh basil
    2 tsp chopped thyme
    1 tsp cajun spice
    salt and pepper
    fresh basil leaves to garnish
    
    

    Cook the rice in plenty of lightly salted boiling water for about 11 minutes until just tender. Rinse with cold water and drain well.

    Fry the peppers and onions together with fry light until softened (about 5 mins) Add the chilli and tomatoes and cook for a further 2 mins. Add the vegatable mixture and red kidney beans to the rice, stir well to combine. Then stir the chopped herbs ard cajun spice into the the mixture. Season well with salt and pepper, and serve, garnished with basil leaves.
