    Salmon with dill and veg

We haven't made this much recently as the kids far prefer the avocado dip. They don't like this 'cos it's got onions - which they eat in everything else, it's just that they're not cut into itsy bitsy pieces here.

    Salmon pieces
    Homemade chicken stock
    Carrots
    Onions
    Olive oil
    Splash of white wine
    Dill
    Creme fraiche
    Seasoning

Anyway, cut the carrots and onions into thin strips and fry in the olive oil until soft. Add the stock, wine, seasoning and half the dill. Cook until the the veg is soft and the flavour have amalgamated. Don't add too much wine - it's just there to bind the dill flavours into the sauce. Add the salmon to poach/semi steam with the remaining dill. You may need to take the salmon and veg out to reduce the sauce to a nice consistency.
