Celeriac

    Celery soup

1 head of celery, chopped into small pieces
    1 small potato, chopped small
    2 leeks, chopped small
    1oz butter
    1 pint chicken stock
    Celery salt
    5 fl oz single cream
    5 fl oz milk
    Pepper

Gently cook the potato, leeks and celery in the butter for fifteen minutes or so in a pan with the lid on. Add the stock, season with the celery salt and pepper, then bring to the boil and simmer for half an hour until everything is soft. Blend and pass though a sieve. You can freeze at this point if needed. Add the cream and milk and check seasoning before serving.

We sometimes drop the potato but use celeriac instead, and you can use vegetable stock
