Cheesecake

    Lemon and lime cheesecake

    This is a summer treat, definitely not healthy eating!

    
    20 chocolate digestive biscuits, crushed
    100g butter, melted
    50g (scant 2oz) demerara sugar
    300ml (10fl oz) double cream
    2 x 397g can full fat condensed milk
    2 x 180g Philadelphia full-fat cream cheese
    Grated zest and juice of 4 large lemons
    Grated zest and juice of 3 limes
    
    

    Crush the biscuits then mix with the sugar and combine with the melted butter. Press the mixture firmly into a tin and place in the fridge to cool.

    Mix the cream, philly and condensed milk in a bowl until consistent. While whisking, add the lemon and lime zest and juices and mix until it thickens.

    Pour onto the base and put in the fridge until set.
