    Ginger Creme Brulee

    40g ginger
    150g soft brown sugar plus extra for caramelising
    4 eggs separated
    500ml whipping cream
    
    

    Heat the oven to l20 deg C

    Peel the ginger and dice it finely. Combine half the sugar with 150ml water in a saucepan, dissolve over a low heat and then bring to the boil. Add the ginger and cook on a low simmer for 20 minutes. Drain the ginger. Whisk the egg yolks vigorously with the remaining sugar and the cream (freeze the

    whites for making meringues).

    Divide the candied ginger between six ramekins, cover with the crdme brulee mixture and cook in a bain marie for 45mins. Chill the creme brulee for an hour.

    Sprinkle with the extra-soft brown sugar and caramelise it under the grill or with a blowtorch.
