    Tomato pasta

  2. A simple tomato pasta.

    
    2x 400ml tins tomatoes
    half a block of parmesan, grated
    2x bags mozarella
    Loads of basil (2 bags)
    olive oil
    Penne 
    
    

    Cook the tomatoes with olive oil in a pan until reduced by about 30% Add the

    parmesan off the heat, and then pour over the cooked pasta and mix. Stir in the chopped basil and cubed mozarella and put in a preheated oven (200deg) for a good 10 minutes.

    175g penne pasta
    400g can whole plum tomatoes drained
    l25g freshly grated parmesan cheese
    2 tbsp olive oil
    150g Italian mozzarella cheese diced
    2 tbsp freshly chopped basil
    salt and freshly ground black pepper
    
    

    Cook the pasta in boiling salted water for 10 mins until just tender. Meanwhile heat the tomatoes and oil in a pan, breaking down the tomatoes gently with a wooden spoon. Add the mozzarella, half the parmesan, basil and seasoning to taste.

    Bring to the boil and remove from the heat.

    Drain the pasta and place in a ovenproof dish. Sprinkle with the remaining parmesan and place in a preheated oven 200 deg C until the cheese is golden.
