Freezer Essentials

    Ratatouille

    We always always have a huge stock of ratatouille in the freezer, bagged up in two people portions. We don't just use it as a quick veg with lamb chops for instance, but as an ingredient in other dishes such as Spag Bol. The great thing is that when the allotment courgettes are producing faster than you can eat them and we have loads of onions ready, Lidl comes up with offers on aubergines, peppers and tomatoes at the same time, so it's really a no brainer.

    Ratatouille is easy to make but takes a lot of chopping.

    We tend to use the following:

    Aubergines
    Courgettes
    Peppers - all colours
    Fennel - sometimes
    Tomatoes
    Onions
    Garlic
    Oregano/Marjoram
    

    Chop the veg up into large pieces, toss in olive oil, grated garlic and layout on oven trays. Add the oregano and tomatoes and cook in a hot oven for about 40 minutes.
