Courgette and Squash

    Provencale Courgette

    Posh name for herby courgette. As we had marrows coming back from holidays we needed to get on top of the courgette mountain. We're told in that in Italy, they simply cook them with lots of herbs and olive oil - and it works up to a point. We roast the chopped courgettes drizzled with olive oil and sprinkled with lots of provencale herbs. This reduces them down significantly - the trick is to just leave them, turn the oven off to evaporate the water. The downside is that any charing, which adds a nice smoky flavour tends to turn any liquid left a little grey - not the most appealing. Tastes nice, lacks presentation.
