Dressings and Sauces

    Ginger and sesame dressing

This uses the syrup from a jar of crystallised ginger.

1 clove garlic, peeled and crushed
Half tsp finely crushed fresh ginger
    1 tbsp ginger syrup
    1-2 tsp Japanese soy sauce
    1 tsp sesame oil
3 tbsp ground-nut or vegetable oil
    2 tsp white-wine vinegar
    Lemon juice

Mix the ingredients together, adding enough lemon juice to balance the flavour. Add a few grinds of black pepper (you should not need salt). Whisk everything together well and serve. One tbsp peanut butter and a dash of tabasco can be added for a rich spicy flavour.
