  2.
    140g golden caster sugar
    140g ground almonds
    140g butter, melted
    1 egg + 1 egg yolk
    2 tbsp kirsch or Armagnac
    375g sweet shortcrust pastry
    500g cherries, stoned
    2 tbsp Cherry Jam

Mix the sugar, almonds, butter and single egg to a creamy paste. Stir in the kirsch or Armagnac and chill for 20 mins.

Heat the oven to 170 deg C. Line a 23cm loose-bottomed tart tin with the pastry and blind bake for 20-25mins until golden, removing the foil/beans after 15mins.

Spread the almond paste onto the base of the pastry and bake for 25 mins until golden and crisp. When the tart comes out of the oven, arrange 50Og of cherries on top in a single layer. Heat the cherry jam with 1 tbsp water until smooth, then brush over the cherries. Leave to cool before removing from the tin. Serve with a spoonful of crime fraiche.
