    Dark Ginger Cake

    This is a recipe adjusted by Roan. He reckoned the original.... "needs fruit and it's too clovey" - Yep we agree, more ginger and sultanas, but the cake itself is deliciously moist !

    
    150g butter
    300g golden syrup
    200g dark muscovado sugar
    250ml Guinness
    3 tsp ground ginger 
    2 tsp ground cinnamon
    1/8 tsp ground cloves
    100g Sultanas 
    300g plain flour
    2 tsp bicarbonate of soda
    300ml sour cream
    2 eggs
    
    

    Preheat the oven to 170°C

    Whisk the sour cream and eggs together in a bow.

    Mix the butter, syrup, sugar, Guinness, sultanas and spices in a pan and heat just enough to melt, then whisk in the flour and bicarbonate of soda. When fully mixed, stir in the cream and egg mixture.

    Pour into buttered tins and bake for about 45 minutes

    Cool, then decorate.
