Cauliflower

    Cauliflower broccoli leek cheese

    Easy one this, but have some short cuts.

    Chop leeks, cauli and broccoli and microwave in a covered dish with 2 tbsps or so of water for about 8 mins.

    Whilst that's cooking, make a cheesy sauce

    
    150g strong cheddar 
    4 heaped tbsp plain flour
    2oz butter
    1 heaped tsp english mustard
    750ml to 1 litre milk
    
    

    In a pan, cook out the butter, flour, mustard and a little milk so it cooks though and forms a ball, meanwhile microwave the milk to be hot - so that you don't have to stand there stirring milk and flour for ages until it gets hot on the hob !

    Add the hot milk to the pan bit by bit until it turns into a sauce - bring it to the boil while stirring. Take off the heat and mix in the cheese.

    Drain off any water with the veg and pour over the cheese sauce - put in an oven - reasonable temperature until it's bubbly and golden on top.
