    Pistachio Sable Biscuits

These are so tasty - make them in batch and freeze - a few mins in the oven defrosts them and warms them through.

    160g plain flour
    160g butter
    160g parmesan, grated finely
60g (not 160g !) pistachios without the shell
    cayenne pepper
    seasoning

Crush the pistachios well using a rolling pin or blender and add to the other ingredients. Bring it all together and ensure it's mixed well but not overworked. If the oven's on already test cook a small piece to ensure seasoning and spiciness are ok.

Roll into a sausage about an inch in diameter and chill in the freezer for about half an hour.

To make the biscuits, slice the sausage into disks about 5mm thick, place on a greaseproof paper tray and bake in a pre-heated oven at 180 deg until golden, usually about 12 mins.
