Freezer Essentials

    Thai green curry mix

    Green curry mix is always handy to have prepared in the freezer, giving life to left over roast chicken. It freezes well as does lemon grass by the way.

    Green chillis
    Shallots
    Ginger
    Lemongrass
    Garlic
    Kafir lime leaves
    Corriander & Basil
    Thai fish sauce
    Lime juice
    

    Blitz all to paste and freeze, ready to go

    So, you just need that left over chicken, an onion, green beans, a tin of coconut milk, the thai fish sauce bottle, a lime, a few frozen kafir lime leaves, and an some fresh herbs - corriander and basil, to get that green curry fix. The latter items pep up the curry at the end and adjust the flavours. Now that I write it down, it seems like quite a lot of additional things needed, but we tend to have these around. At least you don't get chilli over your fingers each time
