Courgette and Squash

Crispy Courgette

This is quite nice as a starter, common in Greece, and better if there's a mix of aubergines and courgette. Chop the courgettes into 1cm thick slices as big as possible ie. on the diagonal. Dip each piece in flour, then into a simple seasoned egg/milk/flour batter and shalow fry.
