Freezer Favourites

    Chilli

    Scale it up - it’s another freezer favourite

    
    500g beef mince
    2 Onions
    1oz Beef dripping
    4-6 hot chillies, more milder ones, chopped small, seeds and all
    Handful of cardamom seeds, lightly crushed
    400g can red kidney beans
    1 tbsp plain flour
    2 tbsp tomato puree 
    1 pt beef stock
    Couple cloves garlic
    1 red or green pepper.
    Salt and pepper
    
    

    Cook the chopped onions, and mince in a big pan in the beef dripping. Add the flour and mix well, then add the garlic, chillies, cardamom, stock and tomato puree, then season. Bubble for half an hour or so to amalgamate the flavours, then add the red kidney beans and pepper. Simmer for another half hour or so.
