This is our simple website - running on a beaglebone black, it hosts our favourite recipes and cakes, and things that interest us. There's an area for the kids for when they start to learn computing at school, and a personal blog for us all

    Lemon Meringue Pie

    2 Large lemons, Juice and rind
    4 Eggs, separated
    45g Cornflour
    30g Butter
    285ml Water
    225g Granulated sugar
    115g Caster sugar
    
    

    Mix lemon rind with cornflour and blend in with lemon juice. Heat the granulated sugar, water and butter in a pan until the sugar has dissolved. Bring to the boil then stir into the cornflour. Return the mix to the pan and stir to thicken.

    Cool then add the egg yolks and pour into the flan case.

    Whisk the egg whites until very stiff, the add in half the caster sugar and whisk until smooth. Fold in the remaining caster sugar. Dollop the meringue on top of the base then bake at 120-135 deg C for half an hour or more, longer if crispy meringue is required.
