Courgette and Squash

    Stuffed Courgettes

  2. So we all know that when you grow courgettes; at some point you get a glut and can't keep on top of eating them, or you go away for a week and whoops, you now have marrows, or even they just hide under a leaf and turn into marrows. So here's what to do with them...
    A few courgettes or the marrow
    1 packet minced lamb
    2 pickled peppers
    1 small onion, grated
    Large tomato, diced but no seeds
    mint, chopped
    1 tsp ground cumin
    ½ tsp ground cinnamon
    ½ tsp dried chilli flakes
    10g pine nuts
    olive oil
    salt and freshly ground black pepper 
    
    For the mint yoghurt

    mint, finely chopped
    tomato, finely chopped
    salt and freshly ground black pepper
    
    Halve the courgettes and scoop out the middle Mix the lamb, onion, tomato, mint, spices and pine nuts together and season very well with a lot of salt up to two teaspoons. Stuff the courgettes and drizzle oil over the top. Bake until the lamb is browned on top and the courgettes are soft, about 40 mins. Mix the yoghurt, tomato and mint and season well to make the dressing.
