Slimming World Meals

    Chilli cornbread

    Fry light
    150g fine polenta
    1 tsp baking powder
    Salt and pepper
    4 large eggs, lightly beaten
    300g Very low fat natural yogurt
    275g canned sweetcorn, drained
    2 mild green chillis, deseeded and finely chopped
    200g bottled roasted red peppers in brine,
         rinsed, drained and finely chopped
    6 spring onions, finely sliced
    
    

    Preheat oven to 170 deg C. Spray a 20cm iron skillet or an ovenproof, non-stick baking tin with fiy light. Mix the polenta and baking powder and season well.

    Combine the beaten egg and yogurt then pour onto the polenta mixture. Add the sweetcorn, chillis, red peppers and spring onions and stir lightly to combine.

    Pour the batter into the prepared skillet or tin and bake for 35-40 mins until firm and lightly browned on top. Cut the warm bread into squares or slices and serve immediately.
