This is our simple website - running on a beaglebone black, it hosts our favourite recipes and cakes, and things that interest us. There's an area for the kids for when they start to learn computing at school, and a personal blog for us all

    Banana breakfast muffins

    250g self-raising flour
    1 tsp baking powder 1 tsp
    Half tsp bicarbonate of soda
    100g light brown muscovado sugar
    bananas, 2 large or 3 small, ripe and mashed
    2 eggs
    125ml buttermilk
    75g butter, melted
    3 tbsp oats
    
    

    Line a 12-hole muffin tin and heat the oven to 170C. Sift the dry ingredients into a bowl. Mix the bananas, eggs, buttermilk and butter then add to the dry mix with a pinch of salt. Fold it together lightly and quickly. Don't worry if the mixture looks lumpy - keep going until it is smooth and your muffins will be tough. Spoon into the muffin cases and sprinkle on oats. Bake for 20 minutes, then cool on a wire rack.
